Made with our pasture raised Katahidin lamb (80%) and pasture raised Berkshire pork (20%). Moroccan fashioned Merquez but with mild heat, dried fruit, cinnamon, cumin, and roasted coriander. Made exclusively for Florida Fields to Forks farm by Chef Jack Garrison. Sold by the approximate pound. Unlike the wooly oil sheep that has that wild game flavor, the Katahdin lamb is a hair sheep with a wonderful mild flavor. This is the perfect sausage for a light dinner.
